Coconut milk should not be confused with coconut water, which is found naturally in immature green coconuts.
Unlike coconut water, the milk does not occur naturally. Instead, solid coconut flesh is mixed with water to make coconut milk, which is about 50% water.
By contrast, coconut water is about 94% water. It contains much less fat and far fewer nutrients than coconut milk.
Making our organic coconut milk powder is a small local operation. Our friends who harvest organic coconuts for water on Maui use the mature coconuts to make our coconut milk powder.
Our coconut milk powder ingredients: Evaporated coconut milk powder from mature, ripe, organic coconuts and 2% of organic tapioca flour.
To make coconut milk, add 1 heaping scoop coconut milk powder to water until it reaches desired consistency. To make “light coconut milk,” mix ½ cup of coconut milk powder with 1 cup warm water. To make “coconut cream,” mix 1.5 cups coconut milk powder with 1 cup of warm water.

Coconut and Almond Cookies
Ingredients
- 1 oz almond meal
- 1 oz coconut oil
- ½ cup of coconut sugar
- 1 cup of rolled oats
- 1/4 cup of hemp seeds
- 1 teaspoon of coconut milk powder
- 1 ounce of dark chocolate chunks
- 1/3 cup of almond butter
- Pinch of salt
- Pinch of ground cardamom
- 1 oz of coconut oil
Instructions
Mix all the ingredients in a large bowl till it forms the consistency of cookie dough. Line a baking tray with butter paper. Then make small mounds out of the cookie dough and place them one by one on the baking dish. Bake these in the oven for 25 minutes.
